The mantra "once you pop, you can't stop" holds true for this popular Filipino-Chinese pastry. Mainstream brands sell this in sealed and pre-packed but there is a unique charm in the less widely known bakeshop that is Baker's Fair. Their hopia is sold fresh off the grill - with the outsides still hot and toasted. The mongo filling is soft and sweet while the outside is not flaky. It can be bought for as few as 5 pieces (₱25 for 5 pcs) or as much as 20 (will be served in a reusable microwavable container). I heard there's a following for the ube variant and diced mongo, too, so be sure to try that while you are at it.
